Walk through a Bónus (a grocery chain in Iceland) and you will find a cemetery of zombie vegetables. Iceland is beautiful, but not what you would call prime agricultural real-estate. Be that as it may, if you look, you can find. One sturdy vegetable, a bastion of hope in a barren wasteland, is the broccoli.

Broccoli, a member of the cabbage family, contains lots of wonderful nutrients, including iron, Vitamin C, Calcium…etc. Perfect for keeping your bones strong and preventing that dreaded scurvy, a constant fear of mine since learning about it in elementary school.

Cheddar is also great, contains calcium and is a slang term for money. Combining these two great ingredients into a bright green slime, we have the perfect soup for a vegetarian pirate or a Ghostbusters fan.

Your family will know who to call when they need a soup for the potluck.

Spergilkálssúpa: Broccoli Cheddar Soup

Preparation time: 2 minutes

Cooking time:   10 minutes

Ingredients:

5     Crowns of Broccoli

1     Bowl of shredded Cheddar (It’s up to you how much).

250mL   Heavy Cream

2L   Cold Water

 

Salt, Pepper, Radish Sprouts and some extra slices of Cheddar!

Directions:

  1. You need 5, or more, crowns of broccoli. Look at how beautiful they are!

2. Wash your broccoli. I like to do it dramatically.

3. Boil broccoli until tender.

4. Fill a blender with broccoli, the cream, the bowl of cheddar and add water so it goes half as full as the broccoli in the blender. NOW WAIT. Give it a minute to cool down or the blender will explode hot broccoli water all over you. PLACE A TOWEL OVER THE LID to insulate your hand when you do decide to give it just a quick blend, maybe half a second. Lift the lid off and let out some steam. You’ll be able to see when it’s going to blend without exploding.

5. Season well and garnish with a slice of cheddar and some radish sprouts. You don’t need to, actually. This soup is simple and delicious. The rich green will amaze or confuse guests, but everyone will ask for the recipe. If you want a healthy option, skip the cream and the cheese. It’s still delicious.

WTF is a Soup Tuesday?

As the sun yet again makes her life-draining descent towards winter solstice, it becomes clear: fall has arrived. The darkness in store will likely bring a lot of you down, but don’t fret or give up—there are a number of methods for fighting off the winter blues: Reading, lýsi, sex, drugs, alcohol, and—of course—soup. Now, doing most of those things would be mostly inappropriate, if not illegal, at the Reykjavík Grapevine’s offices (if it were one of those “appropriate” offices)—except for maybe the lýsi and reading. And of course, the soup.

Lýsi is kinda disgusting and reading is for nerds, so to combat the coming full-scale attack of the SADs, we decided to started a new tradition to help us make it through the coming winter: SOUP TUESDAYS. Yes! Soup Tuesdays! Every Tuesday, we’ll be making a different soup in our shitty little office, document the process and then show you how to make one for yourself.

You can also send us your best recipes (on Facebook, Twitter, Instagram or email), with a photo, so we can share soup knowledge throughout the world. Together we can make it through the bad weather.
